2 oz. light rum
2 oz. dark rum
2 oz. passion fruit juice
1 oz. orange juice
1/2 oz. fresh lime juice
1 Tbsp. simple syrup
1 Tbsp. grenadine
Orange slice and cherry for garnish

Shake all ingredients in a cocktail shaker with ice and strain into a hurricane glass filled with ice. Garnish with a cherry and an orange slice.

The Best Lemon Drop Martini

1 1/2 oz. good quality vodka
1/2 oz. orange liqueur (Triple Sec, Grand Marnier, Cointreau, etc.)
1 tsp superfine sugar or to taste
3/4 oz. freshly-squeezed lemon juice
Ice cubes
Superfine sugar for dipping
Twisted peel of lemon

Mix the vodka, orange liqueur, sugar, and lemon juice in a cocktail shaker half-filled with ice; shake well (supposedly the cocktail is to be shaken 40 times to make sure the sugar is well blended).

Pour strained liquor into sugar-rimmed martini cocktail glass and garnish with a twisted peel of lemon. To create a sugar-rimmed glass, take a lemon wedge and rub the drinking surface of the glass so it is barely moist. Dip the edge of the glass into the superfine sugar.

Chai Tea Creme Brulee

2 cups water
4 chai tea bags (or ½ cup loose-leaf chai tea)
1 1/2 cups milk
1/4 cup honey
1/4 cup sugar
6 ounces rum
1/2 teaspoon pure vanilla extract
Ground cinnamon, as needed for finishing

In a medium pot, bring the water to a boil over medium heat. Remove the pot from the heat and add the tea bags (or the loose-leaf tea). Let the mixture steep for 5 to 6 minutes. Remove the tea bags or strain out the loose tea.

Return the tea mixture to the pot and then stir in the milk, honey and sugar. Heat, stirring occasionally, until the sugar is dissolved. Remove the pot from the heat and stir in the rum and vanilla extract. Divide the mixture among four mugs and garnish each with a pinch or two of cinnamon. Serve immediately.

4 cups boiling water
5 regular-size tea bags
3/4 cup sugar
1 teaspoon lemon zest
4 cups cold water
1 cup bourbon
1/2 cup fresh lemon juice
Garnish: lemon slices

Pour boiling water over tea bags, sugar, and lemon zest in a large bowl. Stir until sugar is dissolved; cover and steep 5 minutes. Pour mixture through a fine wire-mesh strainer into a large pitcher, discarding tea bags and zest. Stir in 4 cups cold water and next 2 ingredients. Cover and chill 30 minutes to 12 hours. Serve over ice. Garnish, if desired.

To make this tea a day ahead, follow recipe as directed, omitting ice and garnish. Store in the refrigerator in a pitcher. When you are ready to serve, stir in ice cubes and lemon slices.

1 mango, peeled and diced
1/2 orange, thinly sliced
5-6 strawberries, sliced
1/2 cup raspberries
1/3 cup Cointreau, Grand Marnier or other orange-flavored liquor
1 bottle white wine
fresh mint leaves, for garnish

Add all the ingredients to a pitcher and refrigerate for at least 3 hours. To serve, stir the ingredients in the pitcher, then pour over a glass of ice. Garnish with fresh mint. You can store the white sangria for up to two days in the fridge.

Ice
